From its origins with 20 hectares in the hills of Castel San Pietro, Umberto Cesari has grown into a prestigious winery encompassing 12 estates, two production sites, several barrel rooms, and remarkable hospitality facilities. The winery combines the art of handcrafted winemaking with the precision of advanced technologies, reflecting a passionate and constantly evolving approach. An Extraordinary Team Effort

The winery demonstrates unwavering dedication to ensuring the swift transfer of grapes from vine to cellar. Every step of the production process is carefully managed: grapes are selected, analysed, tested, and overseen with meticulous attention to detail. Experts collaborate continuously, sharing knowledge and refining decisions, creating a dynamic environment where winemakers, artisans, tasters, and specialists work together in an extraordinary collective effort.

Nature and Tireless Dedication

On the estates, vineyards, grapes, and wineries are managed with human expertise guiding state-of-the-art equipment. Fermentation remains a natural process, yet modern technology allows precise control to enhance the quality of the wines. During harvest, grapes are transported promptly to the winery, where they are processed through de-stemmers, crushers, or optical selectors for Cru wines. White grapes are pressed within hours, while red grapes go directly into fermenters, all under close human supervision.

Perfection Lies in the Wait

Long-aging reds, as well as Liano Bianco and Colle del Re Passito, are matured in barriques and tonneaux crafted from fine-grained, medium-toasted Allier oak, while Laurento and MOMA Rosso are aged in large Slavonian oak barrels. The natural porosity of oak allows micro-oxygenation, resulting in wines that are smoother, more structured, and harmonious. The ageing environment is carefully maintained at a constant 16–18°C with 80% humidity by Air Treatment Units, ensuring ideal conditions for maturation.

The estate’s twelve farms each possess distinct characteristics, from soil composition and altitude to humus content and water tables. Each plot responds uniquely to cultivation. Before planting, the vineyards were observed patiently to determine the most suitable varieties for each parcel. This careful attention produces grapes of exceptional quality, yielding wines that authentically reflect their terroir.
